See below recipe: ARROZ CALDO RECIPE Ingredients : Cooking oil 1 lb chicken (I got drumsticks and thighs) 1 clove garlic, peeled, pressed and minced 1 white onion, chopped Ginger, peeled julienned and pressed 1 cup uncooked glutinous rice 5 cups water 4 tbsps fish sauce (according to your taste) Safflower, 2 tsp or more Black pepper to taste Toppings: Boiled egg Fried chopped crispy garlic, as many as you wish. Spring onions Calamansi or lemon juice Saute garlic, onion and ginger until aromatic. Add chicken and stir in fish sauce. Mix well and simmer in own juice for about 5 minutes. Add rice, stirring well for 2-3 minutes. Pour water and add Safflower. Bring to a boil while stirring constantly. When it starts to boil, lower heat and cook for 20 minutes or until rice is cooked.
